There's an excellent piece over at the Charleston City Paper by Robert Moss about the heritage of BBQ in South Carolina and Beaufort.

If you're someone who's into BBQ and/or South Carolina history you'd do well to take a read as there's a couple good references to the emergence of BBQ in Beaufort and some good accounts of its history here.
The reason this piece is so good is likely due to Moss having a book, "Barbecue: The History of an American Institution," coming out on September 19.
